Roasting for Debrecen

A small drum, two roast paths, and a tasting room on the market street.

Why we opened

Specialty coffee deserved a home on Piac utca.

Debrecen already knew good coffee — but much of it arrived roasted elsewhere. We wanted a place where the smell of the drum and the taste in the cup belonged to the same address. Dobó Roast is that address: green beans in, rested bags out, and a tasting room upstairs where filter and espresso sit honestly next to each other.

The name nods to the stubborn craft we admire in Hungarian food culture — work done carefully, then shared without theatre. We roast in short charges, keep the board small, and update it when the coffee — not the calendar — is ready.

From first charge to tasting bar

How we work

Small charges. Clear decisions.

We buy green coffee through importers who share farm and lot detail. Each arrival is cupped, then profiled twice when the origin supports both filter and espresso. Rest periods are non-negotiable — bags leave only when the cup tastes settled.

We do not chase every trend origin. We chase cups that make sense for Debrecen’s water, our machine, and the people who walk up Piac utca on a weekday morning.
